Esta receta es todo un descubrimiento. Para ahumarlo voy a utilizar el ahumador de @zwilling_es Es una gozada. Además de ser súper bonito, lo puedes usar como cazuela, para cocinar al vapor... es muy útil también para otros usos. Todavía estoy haciendo pruebas. La verdad que se me ocurren un montón de cosas, verduras, carnes, pescados… INGREDIENTES 600 g de salmón fresco 800 g de sal 800 g de azúcar Virutas para ahumar salmón, haya, roble o estas que son de “Oloroso Barrel Chips” ELABORACIÓN Comprobamos que el salmón no tenga espinas. Hacemos un marinado básico, misma cantidad de azúcar que de sal. Hay que pesarlos porque la sal pesa más y ocupa menos. Lo vertemos en un recipiente y lo mezclamos bien. Ponemos la mitad de la mezcla en la base, colocamos el salmón con la piel hacia abajo y lo cubrimos bien con la otra mitad. Tapamos con film transparente y ponemos unos pesos. Lo metemos al frigo durante solo 10 horas. Después, retiramos la mezcla de sal y azúcar, lo lavamos bien, lo secamos con papel absorbente y ya lo podemos ahumar. Calentamos el ahumador de Zwilling. Para comprobar que la temperatura es la correcta hacemos la prueba de las gotas, si al caer se forman bolas y bailan es que ya la tenemos lista, añadimos las virutas para ahumar. En cuanto salga humo, colocamos la plancha colectora, la rejilla y el salmón marinado. Cerramos, bajamos el calor al mínimo y lo dejamos de 10 a 20 minutos. El tiempo depende de si nos gusta más o menos hecho. Pasado el tiempo, lo retiramos del calor y lo dejamos reposar dentro 10 minutos más. Lo sacamos y lo pincelamos con aceite, yo utilizo de girasol alto oleico porque no le da sabor y se conserva mejor. Queda un salmón con un sabor espectacular. Pruébalo! Que te va a encantar.
